Chocolate Covered Strawberries - Tips and Tricks!

Every Valentine's Day, I make custom orders of chocolate covered strawberries for people. I love making them and people love ordering them for their loved ones because it's way cheaper than the store bought ones (which sometimes may not be fresh). During the summer season, every week you can expect to find strawberries on sale at the grocery store or farmer's market.

TIP#1* I have a small rice cooker/crock pot type warmer thing. It's the best way to melt chocolate and keep it warm. Never melt chocolate in a pot because it will burn and turn into a fudgey mess. If you have a crockpot or a rice cooker, set it on a low setting and just let the chocolate chips melt. It will take some time, but this is the best way to ensure smooth chocolate. If you don't have either, you will have to boil some water in a pot. Then place the chocolate chips in a mixing bowl, preferably glass but any heatproof mixing bowl is fine. Place the mixing bowl over the boiling water and let the chocolate chips melt. Stir occasionally. 

TIP#2! Clean the strawberries including the LEAVES! Rinse well and dry well, if they're not dry then the chocolate will not stick to them. I use a wet paper towel to clean them, just rub them gently and wipe the leaves. You can see how much dirt you're removing on the paper towel! 

TIP#3! Gather all of the leaves upwards with your fingers and dip the strawberry straight down into the chocolate. Tilt and Rotate the strawberry in a pivoting motion while still keeping the bottom of the strawberry in the same place. 

Tip#4! Use parchment or wax paper to place the dipped strawberries on. Aluminum foil works, too.

Tip#5! Stir the chocolate after every dip. This will keep the chocolate smooth and at an even temperature.



What do you do with leftover melted chocolate? I buy a bag of pretzels and make chocolate covered pretzels. Or if you have a Ziploc bag handy, scoop the melted chocolate into the sandwich baggie and snip a small tiny tip off the bottom corner with scissors. This will create a chocolate piping bag and you can use it to write things in chocolate! :D
