Pork Chop Milanese with Risotto


Pork Milanese is one of my favorite things to cook. Milanese can be made with thin chicken breasts or boneless pork chops. This recipe is so easy, it's got about 5-ingredients or less if...
 you've got most of the ingredients already. Pork chops (or chicken), eggs, Italian breadcrumbs, olive oil, and then whatever you'd like to serve with it to complete the meal. Homemade or boxed risotto, fresh or frozen vegetables. I also saw this Giada De Laurentiis kit for Pork Chop Milanese while shopping at Target, my all time favorite store. I spent a good 8 minutes reading the box and trying to wrap my head around how such a nice sounding meal could fit in this small box. Of course, you'd have to provide your own pork chops and eggs but other than that there wasn't much else you needed. 


And I found this sauce packet for Lemon Herb Asparagus. For only $2, I decided to give it a try. I've never really thought about trying to create a whole meal using these meal starters before, or buying products like these, but if you don't have lots of items stocked in your pantry, it was worth it. The meal kit tastes just like the homemade version.  



Get your rice or risotto started. If you'd like, you can also pound the pork chops or chicken breasts. This will ensure that they cook more evenly. Dip the pork chops into a shallow bowl with two beaten eggs, then transfer over to the bread crumbs to coat, then once again dip in the beaten eggs, and finally dip again into the breading. Double coating gives it a nice thick, crunchy crust.


Then I just had to pan-fry it in olive oil for a few minutes on each side. Meanwhile, I peeled and started the asparagus saute using the lemon herb seasoning. 





The finalized meal was garnished with lemon wedges and pretty damn good . The pork chop turned out really crispy and tender. You have to be careful not to overcook the chicken or pork, because then it'll become dry and tough. What'd I tell ya, though? Easy enough?
